Fall is the Time to Forage

From Color Palettes to Feel Good Foods

Living on the Central Coast means that we don't get much of the four seasons that the rest of the country experiences. However, Fall is one of our favorite times here with slightly cooler weather that has plants display an array of colors, is good for growing kale and brussel sprouts, and provides fun natural treasures that we add to our pieces.

As you bring in the new season, enjoy this delicious tower garden recipe and find new inspiration in the beautiful palettes that plants have to offer. Happy Fall!


Kale and Brussel Sprout Salad

INGREDIENTS

  • 1 tablespoon minced shallot

  • 1 small garlic clove, finely grated

  • 2 large bunches of Tuscan kale, leaves thinly sliced*

  • 12 ounces brussel sprouts, trimmed, finely grated

  • 1/4 cup fresh lemon juice

  • 2 tablespoons Dijon mustard

  • 1/4 teaspoon kosher salt plus more for seasoning

  • Freshly ground black pepper

  • 1/2 cup extra-virgin olive oil, divided

  • 1/3 cup almonds with skins, coarsely chopped

  • 1 cup finely grated Pecorino

*All these can come from your Lush Edibles tower garden! This SONOS crew is enjoying the above salad grown out on their patio. 

Assemble:
+ Combine lemon juice, Dijon mustard, shallot, garlic, 1/4 teaspoon salt, and a pinch of pepper in a small bowl. Stir and set aside. Mix kale and brussel sprouts in a large bowl.

+ Add 1 TBSP olive oil to skillet and hear. Add almonds and stir frequently until golden brown in spots, about 2 minutes. Transfer nuts to a paper towel-lined plate and sprinkle lightly with salt.

+ Whisk remaining olive oil in cup into lemon-juice mixture. Season dressing to taste with salt and pepper. Add dressing and cheese to kale mixture; toss to coat. Season lightly with salt and pepper. Garnish with almonds...

When we are designing a piece, we look at the context of the space to help us determine the palette that we will work with. Fall shines here in Santa Barbara because the season evokes warm colors like burnt oranges, dusky reds, muted greens, and golden yellows that are well complemented by the terracotta tiles our city is known for. We love finding these colors in succulents and the vessels that hold them. Where do you find your palette?
